Cheese & Corn Casserole Dip

Who says tacos are just for Tuesdays? We celebrate our love for this cuisine daily! It doesn't have to stop with tacos either. With a picky eater in the house, it's hard to find a food dish we all agree on. But, the one thing that is a must in our house is delicious Hispanic style meals. This cheese and corn casserole dip is so simple to make and easy to pair with any Latin inspired dinner.

The La VaquitaⓇ Queso Fresco cheese crumbled into this cheese and corn dish added the perfect amount of Mexican flavor, and I was able to pick it up at our neighborhood Kroger store. Plus, I love that La Vaquita® Queso Fresco is hand wrapped here in Texas and was created in the lone star state as well. So, what are you waiting for? Grab some Queso Fresco and make this Cheese and corn dip tonight! Everyone will love it!!! Even the pickiest of eaters.


What you need:
  • 1 can of sweet corn (drained)
  • 1 can of mexicorn (drained)
  • 1/2 of a chopped purple onion
  • 1 cup of mayo
  • 1 8oz round of La Vaquita® Queso Fresco, crumbled
  • Tortilla chips (optional)
  • Corn chips (optional)


How to make:


1. Mix the can of sweet corn and the mexicorn together in a large bowl.


2. Add the onion and crumbled cheese and mix well.
3. Add mayo and mix well.
4. Cover and refrigerate for about an hour.


5. Crumble La Vaquita® Queso Fresco on top. Serve as a dip with your favorite chips.


6. Or add corn chips and serve as a side dish.
